Description

This classic French-inspired dish transforms hearty beef short ribs into a melt-in-your-mouth delicacy. The ribs are first seared to develop a deep crust, then slowly braised in a fragrant mixture of red wine, orange juice, and aromatics. The result is incredibly tender meat infused with the bright acidity of citrus and the earthy depth of red wine. Garnished with Niçoise and green olives, this dish offers a complex balance of savory, sweet, and briny flavors.

Ingredients

Directions

  1. Preheat oven to 450°F (232°C).
  2. In a shallow dish, mix flour, salt, white pepper, and cayenne pepper. Dredge the short ribs in the flour mixture until fully coated.
  3. Line a large shallow baking pan with heavy-duty aluminum foil. Place ribs in a single layer, bone-side down.
  4. Bake for 30 minutes. Turn ribs over and bake for another 30 minutes until browned.
  5. Transfer the browned ribs to a platter and set aside. Reserve the pan drippings.
  6. In a large ovenproof skillet or Dutch oven, sauté chopped onions in 2 tablespoons of the reserved pan drippings over medium heat for 5 minutes.
  7. Add chopped carrots and sauté for 5 minutes. Add minced garlic and sauté for 1 minute more.
  8. Stir in any remaining flour mixture and cook for 30 seconds to thicken the base.
  9. Return the short ribs to the skillet or Dutch oven. Sprinkle with crumbled oregano and minced orange rind.
  10. In a bowl, combine orange juice, dry red wine, and water. Pour this mixture over the ribs.
  11. Bring the liquid to a boil over moderate heat on the stovetop.
  12. Cover the pan and place it in the oven. Reduce oven temperature to 350°F (177°C).
  13. Bake for 1 hour, or until ribs are tender when pierced with a fork.
  14. Remove from oven and spoon off excess fat from the surface.
  15. Baste the ribs with the pan liquid. Scatter black and green olives over the top.
  16. Return to the oven and bake uncovered for another 30 minutes.
  17. Serve hot over egg noodles.
