Description

This hearty Fried Beef Soup is a comforting Mediterranean-inspired dish that transforms tender stew beef into a rich, flavorful meal. The beef is marinated in red wine, thyme, and herbs before being seared and slow-cooked with crispy bacon, earthy mushrooms, and sweet pearl onions. The result is a deep, savory broth with tender meat and robust aromatics. Perfect for cold evenings or meal prep, this recipe delivers a satisfying, home-style taste that feels luxurious yet simple to prepare.

Directions

  1. Combine red wine, olive oil, dry minced onion, thyme, parsley flakes, bay leaf, and pepper in a large bowl to create the marinade.
  2. Add the cubed stew beef to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 3 hours, or overnight for deeper flavor.
  3. Drain the beef, reserving exactly 1 cup of the marinade liquid for later use.
  4. Place the drained beef into the removable liner of a slow cooker. Sprinkle with flour and salt, then toss gently to coat the meat evenly.
  5. In a large skillet over medium heat, fry the diced bacon until crisp.
  6. Add the small white onions to the bacon fat and fry until slightly browned. Stir in the minced garlic and cook for 30 seconds until fragrant.
  7. Remove the bacon, onions, and garlic mixture from the skillet using a slotted spoon and add it to the beef in the slow cooker liner.
  8. In the same skillet, sauté the quartered mushrooms in the remaining bacon fat (add a pat of butter if necessary) until browned.
  9. Transfer the cooked mushrooms to the slow cooker liner with the beef and onion mixture.
  10. Pour the reserved 1 cup of marinade over the ingredients in the slow cooker.
  11. Place the liner into the slow cooker base, cover, and cook on AUTO for 6–7 hours, LOW for 8–10 hours, or HIGH for 4–5 hours, until the beef is tender.
