Ingredients

Directions

  1. Stir-fry the chopped onion, minced garlic, and grated ginger in a nonstick wok with a little oil until the onion is transparent and slightly browned.
  2. Transfer the onion mixture to a blender with 1/4 cup water and blend into a smooth paste. Set aside.
  3. Heat ghee in the wok over medium heat. Add cardamom, cinnamon, cloves, and bay leaf. Stir-fry for a few minutes until fragrant.
  4. Add cumin, coriander, and the onion paste to the wok. Continue stir-frying over low heat, stirring continuously for 5 minutes until the oil separates. Ensure the mixture does not burn or change color.
  5. Stir in the yogurt and cook for 15 minutes, stirring frequently to prevent curdling.
  6. Add the chicken pieces, sprinkle in nutmeg and pepper, and cover. Simmer over low heat for 10 to 15 minutes until the chicken is tender and cooked through.
  7. Mix in the ground nut paste and simmer gently for 3 to 5 minutes to thicken the sauce.
  8. Remove from heat. Stir in 1 tablespoon of cream, salt, and half of the garam masala.
  9. Transfer to a serving dish. Top with the remaining cream, a sprinkle of the remaining garam masala, and fresh coriander leaves.
