Melt the butter in a frying pan and add the cauliflower with a pinch of salt.

Cook on a low heat for 30 minutes, stirring regularly, until golden.

Add the sherry and vinegar,

simmer until almost fully reduced, then

transfer to a blender and blitz until smooth, adding just enough chicken stock to get a creamy consistency.
