Description

This unique dish combines the comfort of a rich soup with the satisfying crunch of deep-fried chicken. Dark meat chicken chunks are coated in cornstarch and soy sauce, then fried until golden and crispy. They are briefly tossed in a savory sauce with garlic, ginger, and dried hot peppers before being served over a simmering broth or eaten as a hearty main. The combination of textures—crispy exterior, tender meat, and aromatic, spicy broth—makes this a standout meal. It’s perfect for cold evenings when you crave something warm yet substantial. The dish balances salty, sweet, and spicy notes, offering a robust flavor profile that is both comforting and exciting. Ideal for weeknight dinners or gatherings, it brings a creative twist to traditional chicken recipes.

Directions

  1. In a large bowl, mix the chicken chunks with 1/4 cup soy sauce and white pepper.
  2. Beat the egg and stir it into the chicken mixture.
  3. Add the cornstarch to the chicken and mix until all pieces are evenly coated.
  4. Add a small amount of vegetable oil to the coated chicken to help separate the pieces.
  5. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  6. Carefully add the chicken pieces in small batches to the hot oil.
  7. Fry until golden brown and crispy, about 5-7 minutes per batch.
  8. Remove chicken with a slotted spoon and drain on paper towels.
  9. In a small bowl, mix garlic, ginger, sugar, 1/2 cup soy sauce, vinegar, wine, chicken broth, and MSG if desired.
  10. Stir the sauce mixture until the sugar dissolves completely.
  11. Place a small amount of oil in a wok or large skillet and heat over high heat until hot.
  12. Add sliced green onions and dried hot peppers to the wok.
  13. Stir-fry the aromatics briefly for about 30 seconds until fragrant.
  14. Pour the prepared sauce mixture into the wok.
  15. Add the fried chicken to the wok and toss to coat evenly in the sauce.
  16. Cook for 1-2 minutes until the sauce thickens and clings to the chicken.
  17. Serve immediately while hot.
