Fried Pasta
Description
This Fried Pasta dish transforms simple spaghetti into a gourmet experience with earthy wild mushrooms, bright lemon juice, and rich butter. The key lies in frying the mushrooms quickly over high heat to preserve their texture and intense flavor, then tossing them with al dente pasta and fresh herbs. It delivers an aromatic, well-seasoned taste with a smooth, comforting richness that feels both rustic and elegant. Perfect for weeknight dinners or when you want something satisfying for the whole family, this recipe relies on high-quality ingredients you likely already have on hand. The combination of garlic, chili, and Parmesan adds depth, making it a meal you will come back to again and again.Ingredients
Directions
-
Brush off any dirt from the mushrooms with a pastry brush or a dry tea towel.
-
Slice the mushrooms thinly, but tear any larger mushrooms, like girolles, chanterelles, and blewits, in half.
-
Put the olive oil in a very hot frying pan and add the mushrooms.
-
Let them fry fast, tossing once or twice, then add the garlic and chili with a pinch of salt.
-
Continue to fry fast for 4 to 5 minutes, tossing regularly.
-
Meanwhile, cook the pasta in boiling, salted water until al dente.
-
Turn the heat off under the mushrooms and squeeze in the lemon juice.
-
Toss and season the mushrooms to taste.
-
Drain the pasta and add it to the mushrooms along with the Parmesan, parsley, and butter.
-
Toss gently, coating the pasta with the mushrooms and their flavor.
-
Serve immediately, scraping out all of the last bits of mushroom from the pan, and sprinkle with a little extra parsley and Parmesan.

Note
It is very important to season mushrooms slightly during cooking, as it really brings out the flavor.
If you cannot find wild mixed mushrooms, a mix of cremini and shiitake mushrooms works well as a substitute.
Ensure the pan is very hot before adding the mushrooms to ensure they fry rather than steam, preserving their texture.
