  1. Heat 3 tablespoons of oil in a skillet over medium heat.
  2. Shallow-fry the tofu until light golden brown on each side, about 3 minutes per side.
  3. Remove tofu from the oil and set aside to drain and cool.
  4. When cool enough to handle, cut the tofu into bite-sized pieces.
  5. In the same skillet or a saucepan, heat 2 tablespoons of oil over medium heat.
  6. Add shallots, garlic, chilies, and belachan (shrimp paste).
  7. Fry the mixture for 5 minutes until fragrant and softened.
  8. Stir in the sweet black sauce and tamarind juice.
  9. Cook for another minute, then remove from heat and allow to cool.
  10. Once cooled, grind the mixture into a paste using a mortar and pestle or blender.
  11. Fold the crushed peanuts into the dressing and mix well.
  12. Arrange the blanched bean sprouts, shredded cucumber, and spring onions on a serving plate.
  13. Top the vegetables with the fried tofu pieces.
  14. Pour the spicy peanut dressing over the tofu and vegetables.
  15. Garnish with coriander leaves and serve immediately.

To save time, you can prepare the Spicy Peanut Dressing in advance and store it in the refrigerator.
