Ingredients

Directions

  1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add the tofu skin and stir-fry for 5 minutes until crispy, then remove and set aside.
  2. In the same wok, heat 2 tablespoons of oil. Add garlic and ginger, and stir-fry for 30 seconds until fragrant.
  3. Add the mushrooms and stir-fry for 1 minute. Add the cabbage and continue to stir-fry until slightly softened.
  4. Add the drained vermicelli, carrot, soy sauce, sugar, salt, and pepper. Stir-fry for 2 minutes to combine flavors.
  5. Pour in 1 cup (250 ml) of reserved mushroom liquid. Stir-fry for 5 minutes until the liquid reduces slightly and the sauce thickens.
  6. Stir in the reserved crispy tofu skin, bean sprouts, spring onions, and sesame oil. Mix well.
  7. Garnish with the remaining tofu skin and red chili. Serve immediately with wedges of lime, bottled chili sauce, or pickled green chili.
