  2. Cut the tofu pouches in half lengthwise, then cut into short, narrow strips.
  3. In a small saucepan, combine the water, salt, sake, soy sauce, and mirin.
  4. Bring the liquid mixture to a boil over medium-high heat.
  5. Add the cut tofu strips to the boiling liquid.
  6. Reduce heat to low, cover the saucepan, and simmer gently for 10 to 15 minutes until the tofu is tender and has absorbed the flavors.
  7. Remove from heat and let stand for 5 minutes before serving.

For added texture and flavor, you can include mixed fresh mushrooms or mountain vegetables (sansai) in the simmering liquid. If using mushrooms, add them at the same time as the tofu.
