Note
For added texture and flavor, you can include mixed fresh mushrooms or mountain vegetables (sansai) in the simmering liquid. If using mushrooms, add them at the same time as the tofu.
This dish can also be prepared in a rice cooker by adding the tofu and sauce ingredients after the rice has finished cooking, allowing it to simmer during the keep-warm phase.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
If you prefer a thicker sauce, simmer for an additional 5 minutes uncovered to reduce the liquid slightly.
