Ingredients

Directions

  1. Soak noodles in boiling water in a heatproof bowl for 5 minutes.
  2. Stir noodles to separate strands, then drain well.
  3. Heat a wok or large frying pan over high heat.
  4. Add oil and swirl to coat the surface.
  5. Add carrot, onion, capsicum, garlic, and ginger; stir-fry for 2 minutes or until fragrant.
  6. Add bok choy and sauces; stir-fry for 1 minute or until vegetables are just tender.
  7. Remove vegetable mixture from wok and cover to keep warm.
  8. Whisk 2 of the eggs with 1 tablespoon water in a small bowl.
  9. Heat 1 teaspoon of extra oil in the wok; add egg mixture and swirl to coat the base.
  10. Immediately top with a quarter of the noodles before the egg sets.
  11. Ensure the omelette base is whole with no tears in the egg mixture.
  12. Reduce heat to medium-low.
  13. When the egg has almost set, spoon a quarter of the vegetable mixture over one side of the egg.
  14. Top the vegetables with some coriander leaves.
  15. Using a spatula, carefully fold the omelette in half.
  16. Invert the omelette onto a plate.
  17. Repeat with remaining oil, eggs, noodles, vegetables, and coriander to make four omelettes in total.
  18. Serve omelettes immediately with remaining coriander.

Note

This recipe combines elements of a fried tofu sauce concept with an egg noodle omelette preparation. Ensure your wok is very hot before adding the egg to ensure it spreads thinly and cooks quickly.

For best results, use fresh coriander leaves for garnish to add a bright, herbal note that cuts through the richness of the eggs and soy sauce.

If you prefer a spicier dish, add sliced chili peppers to the vegetable stir-fry step.

Store any leftover vegetable mixture in the refrigerator for up to 2 days and reheat gently before using in a new batch of omelettes.
