Frittelle are best served fresh while still warm. They can be stored in an airtight container at room temperature for up to 2 days. Reheat in a 300ðF oven for 5-10 minutes to restore crispness before serving.
If Marsala wine is unavailable, sweet Sherry or a mix of dry white wine and a little sugar can be used as a substitute. For a non-alcoholic version, use apple juice or orange juice for soaking the raisins and mixing the batter.
Maintain the oil temperature at 375ðF (190ðC) for best results. If the oil is too cool, the fritters will absorb too much oil and become greasy. If too hot, they will brown outside before cooking through. Use a candy thermometer to monitor the temperature.
