Description

This elegant Frozen White Chocolate Mousse Cake is a show-stopping dessert that requires no oven time. It features a sturdy, buttery crust made from crushed vanilla wafers, providing a perfect textural contrast to the light, cloud-like mousse. The mousse itself is crafted from melted white chocolate, sweetened egg whites, and whipped cream, resulting in a rich yet airy consistency that melts on the tongue. A hint of Grand Marnier adds a sophisticated citrus note, while chopped pistachios provide a subtle crunch and vibrant color. This make-ahead treat is ideal for holiday gatherings, birthday parties, or any occasion calling for a luxurious finish. Simply assemble, freeze, and serve for a stunning presentation.

Directions

  1. Preheat oven to 350°F (175°C). Mix vanilla wafer crumbs with melted butter until evenly moistened.
  2. Press the crumb mixture firmly into the bottom and slightly up the sides of an 8-inch springform pan or loaf pan.
  3. Bake the crust for 8-10 minutes until lightly golden. Remove from oven and let cool completely.
  4. In a saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until sugar dissolves.
  5. Continue boiling without stirring until the syrup reaches 240°F (116°C) (soft-ball stage), about 5-7 minutes.
  6. While syrup cooks, beat egg whites and cream of tartar in a clean bowl until soft peaks form.
  7. Slowly pour the hot sugar syrup in a thin stream into the beating egg whites, beating continuously until stiff, glossy peaks form and the mixture cools.
  8. Melt the 6 ounces of white chocolate in a heatproof bowl set over simmering water or in short bursts in the microwave. Let cool slightly.
  9. In a separate chilled bowl, whip the heavy cream with vanilla extract and Grand Marnier until stiff peaks form.
  10. Gently fold the melted white chocolate into the whipped cream mixture until no white streaks remain.
  11. Carefully fold the chocolate-cream mixture into the cooled meringue (egg white mixture) in two additions, being gentle to maintain airiness.
  12. Pour the mousse filling over the cooled crust in the pan. Smooth the top with a spatula.
  13. Cover tightly with plastic wrap and freeze for at least 6 hours or overnight until firm.
  14. To serve, run a knife around the edge to loosen, release the springform ring, and transfer to a serving plate.
  15. Garnish with chopped white chocolate and pistachios just before serving.
