Description

This hearty fruit bread is a comforting classic, blending the deep sweetness of prunes, figs, and dates with the tartness of raisins and currants. Infused with warm spices like cinnamon and cloves, it offers a dense, moist texture that is perfect for breakfast or an afternoon snack. The addition of candied citrus peel and almonds provides delightful bursts of flavor and crunch. Ideal for holiday gatherings or cozy weekend baking, this vegan-friendly loaf is simple to prepare using pantry staples, resulting in a beautiful, aromatic treat that pairs wonderfully with butter or tea.

Ingredients

Directions

  1. Soak prunes and figs in just enough water to cover for 1 hour.
  2. Add dates to the soaking liquid and cook gently for 20 minutes until tender.
  3. Remove fruit from liquid, chop coarsely, and mix with raisins, currants, candied citrus peels, and almonds.
  4. Reduce the cooking liquid in the pot to 3/4 cup over medium heat.
  5. Cool the reduced liquid to lukewarm temperature.
  6. Dissolve yeast in the lukewarm liquid and stir until fully blended.
  7. Add 2 cups of flour to the yeast mixture and beat well until smooth.
  8. Cover and let the batter rise until light and spongy, about 1 hour.
  9. Stir in spices, salt, the fruit and nut mixture, and enough remaining flour to form a stiff dough.
  10. Knead the dough on a floured surface until smooth and elastic, about 8-10 minutes.
  11. Place dough in a greased bowl, cover, and let rise until doubled in bulk, about 1 hour.
  12. Shape dough into oval loaves and place on a baking sheet.
  13. Brush loaves with slightly sweetened milk and sprinkle with split almonds.
  14. Let loaves rise again for 30 minutes.
  15. Bake in a preheated 425 degree oven for 45 minutes or until golden brown and firm to the touch.
