  1. Preheat oven to 350F (175C).
  2. Grease eight 6-ounce custard cups with the remaining margarine (about 1/4 teaspoon per cup) and set aside.
  3. In a small bowl, combine the broken matzo pieces with the water and let soak for 5-10 minutes until softened. Drain any excess water if necessary.
  4. In a large mixing bowl, beat 3 tablespoons plus 1 teaspoon of margarine with the brown sugar using an electric mixer until light and fluffy.
  5. Add the egg yolks to the margarine mixture and beat until well combined.
  6. Stir in the soaked matzo, shredded apples, diced prunes, lemon juice, and cinnamon until evenly distributed. Set aside.
  7. In a separate clean bowl, beat the egg whites with salt until stiff peaks form.
  8. Gently fold the beaten egg whites into the fruit and matzo batter until just combined, being careful not to deflate the mixture.
  9. Spoon approximately 1/8 of the batter into each prepared custard cup.
  10. Bake for 35 minutes, or until lightly browned and a toothpick inserted into the center comes out clean.
  11. Allow the kugels to cool in the cups for 5 minutes.
  12. Loosen the edges with a spatula, transfer to a wire rack, and cool completely before serving.
