Fruited Turkey Roll
Description
A savory turkey roll stuffed with sautéed mushrooms, onions, and cheddar, wrapped in a sweet apricot and Dijon glaze. This Mediterranean-inspired dish features fresh herbs like basil, oregano, and sage, balanced by the sweetness of dried apricots and raisins. Serve warm for a hearty and flavorful main course.Directions
-
Preheat oven to 350°F (175°C).
-
In a large bowl, mix the ground turkey, egg, bread crumbs, basil, oregano, sage, and fresh ground pepper.
-
Place the meat mixture between two sheets of plastic wrap or waxed paper and roll out to approximately 9x12 inches.
-
Remove the top sheet of plastic wrap.
-
In a small saucepan, heat the apricot preserves and Dijon mustard until spreadable, then spread this mixture over one side of the meat.
-
In a skillet, sauté the sliced mushrooms in olive oil until lightly browned. Add the tarragon during the last minute of cooking.
-
In the same skillet, sauté the diced onion until tender and place it on top of the mushrooms.
-
Scatter the grated cheddar cheese over half of the meat layer.
-
Using the plastic wrap to assist, roll the meat up jelly-roll fashion to form a log.
-
Place the roll in a baking dish and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
-
While the turkey bakes, combine the apricot nectar, water, dried apricot slices, raisins, minced garlic, minced ginger, flour, and sweet vermouth in a saucepan.
-
Simmer the sauce until thickened, stirring occasionally.
-
Serve the turkey roll sliced, topped with the warm apricot sauce.
