Description

This vibrant Thai soup, known as Gai Dom Kha, offers a perfect balance of creamy coconut richness and sharp aromatic herbs. The broth is infused with the citrusy brightness of lemongrass and kaffir lime leaves, while ginger and galangal provide a warming depth. Tender slices of chicken breast poach gently in the flavorful liquid, absorbing the complex spices. It is a comforting yet sophisticated dish, ideal for weeknight dinners or when you need a soothing bowl of warmth. The combination of sweet, savory, and spicy notes creates a truly authentic culinary experience that feels both luxurious and homey.

Ingredients

Directions

  1. Wash lemongrass stalks, trim the root ends, and peel off the tough outer layers.
  2. Thinly slice the bottom 6 inches of the lemongrass stalks.
  3. Puree 1 tablespoon of the sliced lemongrass, 1 tablespoon of sliced ginger, garlic cloves, peppercorns, coriander roots, and shallots into a smooth paste.
  4. In a large pot, bring 1 cup of coconut milk to a boil over medium-high heat.
  5. Add the lemongrass paste to the boiling coconut milk and stir continuously until the oil separates and the mixture is fragrant.
  6. Reduce heat to medium and add the sliced chicken breast, remaining coconut milk, ginger slices, and remaining lemongrass stalks.
  7. Bring the soup to a boil, then reduce heat to low and simmer uncovered until the chicken is cooked through and tender, about 5-7 minutes.
  8. Remove from heat and season with minced chilies, fish sauce, and lime juice to taste.
  9. Serve hot, garnished with shredded kaffir lime leaves and chopped coriander sprigs.
