Galaxy Doughnuts
Description
These Galaxy Doughnuts are a delightful twist on classic baked doughnuts, incorporating wheat germ, soy flour, and oat bran for a slightly nuttier, heartier texture while remaining incredibly soft and tender. The dough is enriched with melted shortening, scalded milk, and eggs, ensuring a rich flavor profile that stands up to the generous coating of melted butter and cinnamon sugar. Unlike fried versions, these are oven-baked for a lighter feel without sacrificing indulgence. They make for a perfect weekend breakfast treat or an impressive dessert to share with friends.Directions
-
In a large mixing bowl, combine warm water, yeast, and 1/2 teaspoon of the sugar. Let stand for 10 minutes until foamy.
-
In a separate container, mix the melted shortening into the cooled scalded milk.
-
Add the milk mixture, remaining sugar, salt, vanilla, eggs, wheat germ, soy flour, oat bran, and 1 1/2 cups of flour to the yeast mixture.
-
Beat vigorously until the batter is very well blended and smooth.
-
Stir in the remaining 3 cups of flour and beat until the dough is smooth and cohesive.
-
Cover the bowl with plastic wrap and let rise in a warm, draft-free place until the dough doubles in size, about 1 to 1.5 hours.
-
Punch down the dough and turn it out onto a lightly floured surface.
-
Pat or roll the dough out until it is about 1/2 inch thick.
-
Cut out doughnuts using a cookie cutter and place them 2 inches apart on greased baking sheets.
-
Allow the doughnuts to rise, uncovered, until doubled in size again, about 30-45 minutes.
-
Preheat the oven to 400°F (200°C).
-
In a small bowl, mix the remaining 2 cups of sugar with the ground cinnamon.
-
Bake the doughnuts for 10 to 15 minutes, or until they are golden brown on top.
-
While hot, quickly dip each doughnut into the melted butter.
-
Roll the butter-coated doughnuts in the cinnamon sugar mixture until fully coated.
-
Transfer to a wire rack to cool slightly before serving.
