Ingredients

Directions

  1. Skin and bone the chicken breasts, then cut into 1.5-inch by 2-inch strips.
  2. In a bowl, whisk together 1 egg, 1/4 cup beer, 2 tablespoons soy sauce, 1/2 teaspoon salt, 1/4 cup flour, 1/4 cup cornstarch, and 1/2 teaspoon baking powder to make the batter.
  3. Add the chicken strips to the batter, tossing lightly to coat evenly. Cover and refrigerate for 30 minutes.
  4. In a small bowl, mix 6 tablespoons sugar, 3 tablespoons cider vinegar, 5 tablespoons soy sauce, and 1 teaspoon cornstarch to create the seasoning sauce.
  5. Remove chicken from the fridge and coat each piece thoroughly with additional cornstarch (about 1/2 cup total), shaking off excess. Arrange on floured wax paper.
  6. Heat 2-3 inches of oil in a deep pan or wok until very hot (around 350ðF/175ðC).
  7. Fry the chicken pieces for 30 seconds, then remove and drain on a cookie sheet lined with paper towels.
  8. Reheat the oil over high heat until very hot again.
  9. Refry the chicken until crispy and golden brown. Drain again and keep warm in the oven.
  10. Heat 2 tablespoons of oil in a wok over medium heat.
  11. Add minced orange rind (from 1 orange) and fry until golden brown.
  12. Add 1 tablespoon minced ginger and the hot peppers, stir-frying for 20 seconds.
  13. Pour in the seasoning sauce mixture and bring to a boil, stirring constantly until the foam subsides and the sauce thickens into a glaze (about 2 minutes).
  14. Add the fried chicken to the wok and toss to coat well in the glaze.
  15. Sprinkle with 1/3 cup chopped fried peanuts before serving.
