Genoise W/Amaretto Cake
Description
This classic Genoise cake offers a delicate, airy texture that serves as the perfect canvas for the rich, nutty sweetness of amaretto and chocolate. The sponge itself is leavened only by the air beaten into the eggs, resulting in a tender crumb that absorbs the flavors beautifully. The filling combines whipped cream with melted semi-sweet chocolate and a splash of amaretto liqueur, creating a luxurious contrast to the light cake. This dessert is ideal for special occasions, dinner parties, or whenever you want to impress guests with a sophisticated yet homemade treat. It balances the citrus brightness of lemon rind with the deep, indulgent notes of chocolate and almond liqueur.Ingredients
Directions
-
Preheat oven to 425 degrees F (220 degrees C). Grease and flour two 9-inch round cake pans.
-
In a large heatproof bowl, whisk together the eggs and sugar.
-
Place the bowl over a saucepan of simmering water (double boiler), ensuring the bottom of the bowl does not touch the water.
-
Beat the egg mixture constantly with a whisk or mixer until it reaches 115 degrees F and has doubled in volume, becoming pale and thick.
-
Remove the bowl from the heat and continue beating until the mixture is cool to the touch and forms a ribbon when the whisk is lifted.
-
Sift the flour and cornstarch together three times to aerate.
-
Gently fold the sifted flour mixture and the grated lemon rind into the egg mixture in three additions, being careful not to deflate the batter.
-
Divide the batter evenly between the prepared cake pans.
-
Bake for 15 to 20 minutes, or until the cakes are set, spring back when touched, and the edges pull away from the pan.
-
Remove cakes from the oven and let them cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
-
To make the filling, heat the whipping cream in a saucepan until it reaches 180 degrees F and is steaming hot but not boiling.
-
Pour the hot cream over the chocolate chips in a bowl. Let stand for 1 minute, then stir until smooth and melted.
-
Stir in the amaretto liqueur. Refrigerate the chocolate mixture until completely cool and thickened, about 1 hour or overnight.
-
Once cooled, whip the chocolate cream mixture until stiff peaks form.
-
Slice one genoise cake horizontally into two layers if desired, or use the two baked layers. Place one layer on a serving plate.
-
Sprinkle half of the reserved amaretto (if additional was used beyond the filling) or simply proceed to fill. Spread half of the whipped chocolate filling evenly over the first cake layer.
-
Place the second cake layer on top.
-
Ice the top and sides of the cake with the remaining chocolate filling.
-
Transfer any remaining filling to a pastry bag and pipe decorative touches on the top of the cake.

Note
Safety: Ensure the double boiler water is simmering gently, not boiling vigorously, to avoid curdling the eggs.
Storage: This cake contains fresh cream and should be refrigerated. Consume within 3 days.
Substitution: If you prefer a non-alcoholic version, substitute the amaretto with amaretto extract mixed with a little water, or use almond extract.
Tip: For the smoothest texture, ensure the chocolate cream filling is completely cold before whipping. If it is too warm, it will not hold stiff peaks.
Variation: You can add a layer of fresh berries between the cake and filling for a fruity contrast.
