Directions
-
In a saucepan, combine the tomatoes, tomato sauce, brown sugar, lemon juice, chopped onion, bay leaf, celery salt, allspice, pepper, and water.
-
Bring the sauce mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
-
While the sauce simmers, bring a large pot of water to a boil.
-
Blanch the head of cabbage in the boiling water for 3 minutes to soften the leaves.
-
Remove the cabbage and peel off 16 large leaves. If leaves are stuck, dip the cabbage back in hot water briefly.
-
In a large bowl, mix the ground beef, cooked white rice, finely chopped onion, parsley, salt, and pepper until well combined.
-
Press the meat mixture firmly into the bowl to create an even layer.
-
Cut the pressed meat mixture into 16 equal portions, similar to cutting a pie.
-
Place one portion of the meat mixture onto the center of a cabbage leaf.
-
Fold the sides of the cabbage leaf over the filling and roll up tightly. If the core of the leaf is too stiff, cut a small "V" out of the base to allow folding.
-
Place the rolled cabbage seam-side down in a baking dish. Repeat with remaining leaves and filling.
-
Pour the prepared sauce evenly over all the cabbage rolls.
-
Top with crushed gingersnap crumbs (about 12-14 cookies worth).
-
Cover the dish and bake at 350F (175C) for 1 hour.
-
Remove the cover for the last 30 minutes of baking to allow the tops to brown slightly.
