German Strickle Sheets
Description
German Strickle Sheets are a traditional German treat that combines the comfort of soft yeast bread with the indulgence of a sweet, buttery sauce. These rolls start with a rich batter of milk, eggs, and butter, which rises slowly to develop deep flavor. The dough is rolled out and cut into shapes, then topped with a luscious mixture of creamed butter, sugar, and flour before baking. The result is a tender, slightly chewy pastry with a golden, caramelized crust.Directions
-
Scald the milk, then remove from heat and stir in the softened butter until melted.
-
Beat the eggs into the milk mixture until well combined.
-
Allow the mixture to cool to lukewarm temperature.
-
Dissolve the yeast in the lukewarm water and let sit for 5-10 minutes until foamy.
-
Add the dissolved yeast, salt, and sugar for the dough to the cooled milk mixture.
-
Gradually add flour to form a thin, pourable batter.
-
Beat the batter vigorously for about 7 minutes until smooth and elastic.
-
Cover the bowl tightly and place it in a warm, draft-free spot to rise for 7 to 8 hours until doubled in size.
-
After rising, add enough additional flour to form a soft, pliable dough.
-
Knead the dough lightly on a floured surface just until it holds together, then let it rest and rise again for 1 hour.
-
Preheat oven to 400°F (200°C).
-
Roll the dough out to a thickness of about one inch.
-
Cut the dough into biscuit shapes or small squares.
-
Place the cut pieces on a baking sheet and allow them to rise for a second time for 30 minutes.
-
While the rolls rise, prepare the topping: Cream 1/2 cup butter with 2 cups sugar and 4 tablespoons flour until smooth.
-
Carefully stir the 4 tablespoons of boiling water into the butter-sugar mixture and beat until it forms a smooth, thick sauce.
-
Spread the warm topping generously over each risen roll.
-
Bake at 400°F (200°C) for about 20 minutes, or until golden brown and cooked through.
-
Remove from oven and serve warm.
