Description

These Ginger-Almond Florentines are the quintessential holiday cookie, offering a delightful contrast in textures and flavors. The base is a thin, crisp caramelized wafer made from almonds, brown sugar, and butter, spiced with aromatic ginger and bright citrus zest. Each delicate cookie is finished with a smooth layer of melted chocolate, creating a perfect balance between crunchy, chewy, and rich. They are elegant enough for gift-giving yet simple enough for a cozy afternoon tea. The combination of toasted nuts, deep caramel notes, and spicy ginger makes these cookies an irresistible treat that pairs beautifully with coffee or wine.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC). Line two large heavy baking sheets with aluminum foil and lightly butter the foil.
  2. In a heavy saucepan, combine heavy cream, granulated sugar, brown sugar, and butter. Cook over medium heat, stirring constantly, just until the sugars dissolve and the butter melts.
  3. Stir in the toasted sliced almonds, all-purpose flour, crystallized ginger, orange zest, and lemon zest.
  4. Bring the mixture to a boil, stirring constantly. Once boiling, remove immediately from heat.
  5. Drop 1 tablespoon of the batter onto the prepared baking sheet. Repeat five times, spacing the drops 3 inches apart. Repeat with the second baking sheet.
  6. Bake until deep brown, about 10 minutes. Remove from the oven.
  7. While still hot, use a round cookie cutter or a 3-inch glass to press the edges of the cookies inward, shaping them into neat 3-inch rounds.
  8. Slide the foil off the baking sheets and let the cookies cool completely on the foil. Carefully peel the cookies off the foil.
  9. Melt the chocolate in a double boiler or microwave, stirring until smooth.
  10. Arrange the cooled cookies smooth-side up on a rack or parchment paper. Spoon about 1 teaspoon of melted chocolate onto the center of each cookie and spread to the edges.
  11. Refrigerate until the chocolate is set, about 30 minutes.
