  1. Preheat oven to 350ðF (175ðC). Spray a 6-cup fluted tube pan or a 13x9x2-inch baking pan with nonstick cooking spray. If using a tube pan, dust with all-purpose flour and tap out excess.
  2. In a large mixing bowl, combine granulated sugar, brown sugar, cooking oil, and egg whites. Stir until well blended and smooth.
  3. In a separate bowl, whisk together all-purpose flour, whole wheat flour, baking soda, and ground nutmeg.
  4. Add the dry ingredients to the wet mixture. Stir just until moistened; the batter will be thick. Do not overmix.
  5. Fold in 2 tablespoons of finely chopped crystallized ginger and the shredded unpeeled pears.
  6. Pour the batter into the prepared pan.
