Glazed Citrus Bran Loaf
Description
This Glazed Citrus Bran Loaf is a comforting, healthy twist on traditional quick breads. The batter is enriched with bran cereal for added fiber and a tender texture, while fresh orange and lemon zest infuse every bite with bright, aromatic flavor. The real magic happens after baking: a hot, simple syrup glaze made from citrus juices and sugar is poured over the warm loaf, soaking into the crumb to keep it incredibly moist and sweet. Its perfect for breakfast with coffee or as an afternoon snack. The balance of tart citrus and mild sweetness makes it a versatile treat for any occasion.Ingredients
Directions
-
Preheat oven to 350F (175C). Grease an 8x4-inch loaf pan.
-
In a medium bowl, beat the egg, milk, melted margarine or butter, orange rind, and lemon rind together until well blended.
-
Stir the bran cereal into the wet mixture and set aside for 5 minutes to soften.
-
In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
-
Pour the wet cereal mixture into the dry ingredients. Stir just until combined; do not overmix.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
-
While the loaf bakes, combine 1/3 cup sugar, orange juice, and lemon juice in a small saucepan.
-
Bring the glaze mixture to a boil over medium heat, stirring until the sugar is dissolved. Remove from heat.
-
Immediately upon removing the loaf from the oven, use a skewer or wooden pick to prick holes all over the top of the hot loaf.
-
Slowly spoon the hot citrus glaze over the loaf, allowing it to soak into the holes.
-
Let the loaf cool in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
