Glazed Fruit
Description
This elegant glazed fruit dish transforms simple seasonal produce into a show-stopping centerpiece. Bartlett pears and Fuji apples are gently poached in a spiced sugar syrup infused with vanilla, cloves, and citrus zest, resulting in tender fruit with a glossy, caramel-like finish. The addition of grapes, figs, and kumquats adds variety in texture and flavor. Ideal for Thanksgiving or Christmas dinner, this dish pairs beautifully with roasted turkey or can be served as a sophisticated dessert.Ingredients
Directions
-
In a 4-quart saucepan, combine water and sugar. Heat over high heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
-
Cut lemon and orange peels into strips. Add the peels, cloves, peppercorns, vanilla bean, and nutmeg to the sugar syrup.
-
Return the syrup to a boil, then reduce heat to low.
-
Core the pears and apples through the bottom end, leaving the stems intact.
-
Using a channel knife or sharp paring knife, remove 1/16-inch-wide strips of skin from the pears and apples to create stripe or spiral patterns, if desired.
-
Place the pears in the sugar syrup and poach for 12 to 15 minutes, or until just tender.
-
Using a slotted spoon, transfer the pears to a platter.
-
Poach the apples in the same sugar syrup for 8 to 10 minutes. Remove and set aside with the pears.
-
Pour the syrup into a 10-inch skillet and heat to a boil over high heat.
-
Boil the syrup to reduce to 1 cup, approximately 40 minutes.
-
Brush or spoon the reduced syrup over the pears, apples, clementines, blood oranges, grapes, figs, and kumquats until all fruit is coated.
-
Arrange the glazed fruit on a platter.
-
Quarter the pears, apples, clementines, and blood oranges. Halve the figs and kumquats.
-
Using scissors, snip the grapes into small bundles.
-
Serve the glazed fruit medley as a side dish or dessert.
