Ingredients

Directions

  1. Preheat your oven to 350ðF (175ðC). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the devil's food cake mix, water, cooking oil, and bitter cocoa powder. Mix until a thick, cohesive dough forms.
  3. Roll the dough into small balls, approximately 1 to 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 10 to 15 minutes, or until the cookies are set but still soft in the center. Allow them to cool completely on the baking sheet.
  5. While the cookies bake, prepare the filling. Sprinkle the gelatin over the 1/4 cup of cold water in a small bowl and let it bloom for 5 minutes.
  6. In a mixing bowl, cream the shortening with the powdered sugar until light and fluffy.
  7. Microwave the bloomed gelatin in 15-second intervals until dissolved, then stir it into the shortening mixture along with the vanilla extract. Mix until smooth and creamy.
  8. Once the cookies are completely cool, slice each cookie in half horizontally.
  9. Spread a generous amount of the vanilla filling onto the bottom half of each cookie, then top with the other half.

Note

Store the finished cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Bring to room temperature before serving for best texture.

For a richer chocolate flavor, you can substitute half of the powdered sugar in the filling with unsweetened cocoa powder. You can also add a pinch of salt to the dough to enhance the chocolate flavor.

Ensure the cookies are completely cool before adding the filling, otherwise the filling may melt or become too runny. If the dough is too sticky to roll, chill it in the refrigerator for 15 minutes before forming balls.
