  1. Wash mussels well under cold running water.
  2. Discard any mussels that are open when tapped, broken, or float in water, and remove any beards.
  3. Coarsely chop 8 garlic cloves and the peeled ginger.
  4. Blend the garlic, ginger, and 120ml of water until smooth.
  5. Heat 4 tablespoons of vegetable oil in a large pan over medium heat.
  6. Add 6 chopped onions and fry until translucent.
  7. Add the blended paste, 1 sliced hot green chili, 1/2 teaspoon turmeric, and 2 teaspoons ground cumin; fry for 1 minute.
  8. Stir in 1/2 cup finely grated fresh coconut, 1/2 teaspoon salt, and the remaining 230ml of water.
  9. Bring the mixture to a boil.
  10. Add the mussels and mix well to coat them in the sauce.
  11. Cover the pan and lower the heat.
  12. Steam for 6 to 10 minutes, or until mussels open.
  13. Discard any mussels that do not open.
  14. Serve immediately.
