  1. Peel the potatoes and cut them into bite-sized cubes.
  2. Bring a pot of salted water to a boil. Add the potato cubes and boil for 15 minutes until they are partially cooked but still firm.
  3. Drain the potatoes well and set aside.
  4. Break the cauliflower into small florets, discarding the thick stem ends. Wash and drain thoroughly.
  5. Heat vegetable oil in a wide skillet or kadhai over medium-high heat.
  6. Add mustard seeds and cook until they begin to splutter and pop.
  7. Add bay leaf, cardamom pods, and cloves. Sauté for 10 seconds until fragrant.
  8. Add the sliced onions and sauté until they turn golden brown and soft.
  9. Add cumin seeds and coriander powder. Stir for another minute.
  10. Add the cauliflower florets and sauté for 2 minutes, coating them well in the spice mixture.
  11. Add the partially boiled potatoes to the skillet.
  12. Sprinkle turmeric powder and salt to taste. Stir gently to combine without mashing the potatoes.
  13. Pour in 1/2 cup of water. Reduce heat to low and cover the skillet.
  14. Simmer for 5 minutes. Uncover and check if the vegetables are tender.
  15. If the vegetables are still firm, add another 1/4 cup of water, cover, and cook for an additional 5 minutes.
  16. Once tender and the water has evaporated, serve hot.
