These traditional Golabki are a comforting Eastern European classic. Ingredients

Directions

  1. Remove the core from the cabbage and place the whole head in a large pot of boiling water.
  2. Boil the cabbage until the outer leaves become tender and peel away easily, about 10-15 minutes.
  3. Carefully remove the softened leaves and place them on a cutting board; trim the thick central vein if necessary to make rolling easier.
  4. In a skillet, melt butter over medium heat and sauté the finely chopped onion until translucent and soft, but not browned.
  5. In a large bowl, combine the ground pork, ground beef, cooked rice, eggs, sautéed onions, salt, and pepper.
  6. Mix the filling ingredients thoroughly until well combined.
  7. Place about 2 tablespoons of the meat mixture in the center of each cabbage leaf.
  8. Fold the sides of the leaf over the filling and roll tightly to form a cylinder.
  9. Arrange the rolled cabbage rolls seam-side down in a heavy Dutch oven or large baking dish.
  10. Pour the tomato sauce over the rolls and arrange the canned tomatoes on top.
  11. Cover the pot and simmer over low heat for 2 hours, or until the cabbage is very tender and the meat is cooked through.
