Description

This Golden Chicken Chili is the ultimate comfort food for chilly evenings. It combines the earthy richness of slow-cooked Great Northern beans with the mild sweetness of summer squash and the savory depth of cumin and chili powder. The chicken becomes incredibly tender, falling apart into the thick, golden broth. Bright notes from fresh lime juice and cilantro cut through the richness, while pickled jalapenos add a subtle, tangy heat. Perfect for weeknight dinners or potlucks, this one-pot meal is easy to prepare and delivers robust, home-style flavor that satisfies the whole family. Serve it warm with crusty bread or over rice for a complete, hearty meal.

Directions

  1. Rinse dried beans and place in a pot with enough water to cover by 2 inches. Bring to a boil, then drain and rinse.
  2. Place drained beans in the slow cooker.
  3. Add 3 cups of boiling water to the slow cooker.
  4. Stir in cumin, chili powder, minced garlic, chopped onion, and pickled jalapenos.
  5. Place chicken pieces on top of the bean mixture.
  6. Quarter summer squash lengthwise, remove seeds, and cut crosswise into 3/4-inch pieces.
  7. Add squash pieces to the slow cooker.
  8. Cover and cook on low heat for 7 hours, or until beans and chicken are tender.
  9. Stir in drained hominy or corn, sour cream, salt, lime juice, and chopped cilantro.
  10. Spoon chili into bowls and garnish with extra sour cream, chopped tomatoes, and cilantro if desired.
