Gougères are elegant French appetizers made from choux pastry dough infused with sharp Gruyère cheese. These bite-sized puffs feature a crisp, golden exterior and a light, airy interior with pockets of melted cheese. They offer a savory, nutty flavor profile that pairs beautifully with wine or soup. Ideal for holiday parties, brunches, or as a sophisticated snack, gougères are surprisingly easy to prepare. The dough relies on boiled water and butter to create the signature puff, while eggs provide structure and lift. Serve them warm for the best texture, allowing the cheese to remain gooey inside. This classic recipe brings a touch of French bistro charm to any gathering.

Ingredients

Directions

  1. Preheat oven to 425 degrees F (218ðC).
  2. In a medium saucepan, combine water, butter, salt, pepper, and nutmeg. Bring to a boil over medium-high heat.
  3. Once the butter has melted, reduce heat to low. Add all the flour at once and stir vigorously with a wooden spoon.
  4. Cook the mixture over low heat for 1 minute, beating constantly, until it forms a ball and pulls away from the sides of the pan.
  5. Remove the pan from heat. Add the grated Gruyère cheese and beat until well incorporated.
  6. Add 4 of the eggs, one at a time, beating thoroughly after each addition until the egg is fully absorbed.
  7. Continue beating the mixture until it is smooth, shiny, and firm.
  8. Drop the batter in small spoonfuls onto a lightly greased baking sheet to form gougères.
  9. Beat the remaining egg with 1/2 tablespoon of water to create an egg wash. Brush the tops of the uncooked gougères with the wash.
  10. Bake in the upper third of the oven for 15-20 minutes, or until golden brown and doubled in size.
  11. Remove from oven and serve hot, or allow to cool to room temperature.

Note

Ensure eggs are at room temperature for the best emulsion and rise.

Do not open the oven door during the first 15 minutes of baking to prevent the puffs from collapsing.

Gougères can be stored in an airtight container at room temperature for up to 2 days. Reheat in a 350ðF oven for 5 minutes to restore crispness.

For a sharper flavor, you can mix Gruyère with Parmesan cheese.
