Ingredients

Directions

  1. Drain the mandarin oranges and crushed pineapple, reserving the juice from the pineapple can.
  2. Measure the reserved pineapple juice and add enough water to equal 2 cups total liquid.
  3. Pour the liquid mixture into a small saucepan and bring to a boil over medium-high heat.
  4. Remove from heat and immediately pour the hot liquid over the orange gelatin powder in a large mixing bowl.
  5. Stir continuously until the gelatin is completely dissolved.
  6. Add the softened orange sherbet to the gelatin mixture and stir vigorously until smooth and fully incorporated.
  7. Refrigerate the mixture, stirring occasionally, until it is partially set and thickened but still pourable.
  8. Gently fold in the drained oranges, crushed pineapple, and sliced bananas.
  9. Pour the mixture into a 6-cup mold that has been lightly oiled or sprayed with non-stick spray.
  10. Refrigerate for at least 4 hours, or until firm enough to unmold.

Note

Ensure the bananas are added only after the gelatin has partially set to prevent them from sinking to the bottom.

To unmold, dip the bottom of the mold in warm water for a few seconds, then invert onto a serving plate.

For a dairy-free version, substitute the orange sherbet with a non-dairy frozen dessert or coconut cream.

Store leftovers covered in the refrigerator for up to 3 days.
