Description

This unique omelet transforms simple breakfast ingredients into a sophisticated morning meal. The star of the dish is the combination of tart Granny Smith apples and sweet, slow-cooked onions, creating a balanced filling that complements the rich, airy egg mixture. The eggs are prepared with a special technique, folding in stiffly beaten whites to ensure maximum fluffiness, while a touch of heavy cream adds luxurious texture. Finished with a dollop of sour cream and a hint of nutmeg, this dish offers a delightful contrast of flavors and textures. It is perfect for a leisurely weekend brunch or a special treat to start the day, bringing a home-style comfort that feels both indulgent and fresh.

Directions

  1. In a heavy skillet, melt 2 tablespoons of margarine over low heat.
  2. Add the sliced onions, stirring to coat them evenly with the margarine.
  3. Cover the pan and cook for 10 minutes, or until the onions are translucent.
  4. While onions cook, wash, core, and slice the Granny Smith apples into 1/2 to 3/4-inch crescents.
  5. Transfer the cooked onions to a plate and keep warm.
  6. Wipe out the skillet and add 1 tablespoon of margarine, melting it over medium heat.
  7. Add the apple slices and sauté for about 1 minute until browned on one side.
  8. Turn the slices and brown the other side, being careful not to overcook them.
  9. Turn off the heat, add the warm onions back to the skillet, and combine. Set aside.
  10. In a large bowl, combine 8 egg yolks and 6 egg whites.
  11. Add the heavy cream, salt, and pepper to the yolk/white mixture and beat lightly with a fork. Set aside.
  12. In a separate bowl, beat the remaining 2 egg whites on high speed until stiff peaks form (but do not let them become dry).
  13. Give the yolk mixture a quick stir to ensure it hasn't separated, then gently fold in the beaten egg whites until just combined.
  14. In an omelet pan, melt 1 tablespoon of margarine over medium heat.
  15. When the margarine foams, pour in half of the egg mixture.
  16. As the edges begin to set, use a fork to gently pull them toward the center, tilting the pan to allow uncooked egg to flow to the edges.
  17. Cook for 4-5 minutes until the bottom is browned but the top is still moist.
  18. Spread half of the apple-onion mixture over one half of the omelet.
  19. Use a spatula to fold the other half of the omelet over the filling.
  20. Slide the omelet onto a serving plate and keep warm in a low oven while you prepare the second omelet using the remaining egg mixture.
  21. Divide both omelets among 4 serving plates.
  22. Top each serving with 1 tablespoon of sour cream and a light sprinkling of fresh ground nutmeg.
  23. Serve immediately.
