Description

This elegant Grapefruit Mousse balances the bright tartness of fresh grapefruit with the smooth richness of whipped cream and a subtle kick from gin. The addition of egg yolks cooked over a double boiler creates a luxurious, custard-like base that sets perfectly with gelatin. Folded with stiffly beaten egg whites and whipped cream, the result is an incredibly light, airy dessert that feels indulgent yet refreshing. It is an excellent choice for dinner parties or special occasions where a sophisticated, make-ahead dessert is needed. The vibrant pink hue and citrus aroma make it visually appealing, while the texture melts in the mouth. Serve it chilled in individual glasses for a modern presentation.

Ingredients

Directions

  1. Soften the unflavored gelatin in the 3 tablespoons of gin and let it sit for 5 minutes.
  2. Place egg yolks and 1/3 cup sugar in a stainless steel bowl over a hot water bath (double boiler).
  3. Beat the egg yolk mixture until it lightens in color and becomes fluffy, about 2 minutes.
  4. Add the softened gelatin-gin mixture to the egg yolks and continue beating for another 2 minutes.
  5. Remove the bowl from heat and stir in the grapefruit juice, grated grapefruit rind, and sour cream until thoroughly mixed.
  6. Refrigerate the grapefruit mixture for 10 minutes to cool and slightly thicken.
  7. Meanwhile, whip the 2 cups of whipping cream with the 3 tablespoons of sugar until soft peaks form.
  8. Beat the 2 egg whites in a clean bowl until they form firm, stiff peaks.
  9. Fold half of the whipped cream into the chilled grapefruit gelatin mixture gently.
  10. Fold the beaten egg whites into the grapefruit-cream mixture.
  11. Cover and chill the mousse in the refrigerator for 4 to 6 hours until set.
  12. To serve, layer the mousse and sliced fresh strawberries in parfait glasses.
  13. Top each glass with the remaining reserved whipped cream and garnish with whole strawberries.

Note

Ensure the egg yolk mixture is removed from heat before adding the sour cream to prevent curdling.

The mousse must be chilled for at least 4 hours to set properly. For best results, prepare it the day before serving.

You can substitute gin with vodka or orange liqueur if you prefer a different flavor profile.

Use fresh grapefruit juice for the best flavor; bottled juice may taste too sweet or artificial.

Be gentle when folding in the whipped cream and egg whites to maintain the airy texture of the mousse.

This dessert can be stored in the refrigerator for up to 3 days. Cover tightly to prevent it from absorbing other odors.
