Description

This elegant Grasshopper Pie is a beloved dessert featuring a rich, creamy mint custard filling nestled in a buttery chocolate wafer crust. The filling, made with crme de menthe, crme de cacao, and egg yolks, offers a sophisticated balance of sweet and refreshing flavors. Topped with whipped cream and grated chocolate, it provides a luxurious texture that melts in your mouth. Perfect for holiday gatherings, dinner parties, or as a special treat on warm summer evenings, this pie brings a touch of nostalgia and indulgence to any table.

Ingredients

Directions

  1. Preheat oven to 450F (230C).
  2. In a medium bowl, stir together the chocolate wafer crumbs, sugar, and melted butter until the mixture is evenly combined.
  3. Pat the crumb mixture firmly onto the bottom and sides of a buttered 9-inch pie plate to form the crust.
  4. Bake the crust in the preheated oven for 5 minutes.
  5. Remove crust from oven and let cool completely on a wire rack.
  6. In a metal bowl, sprinkle the gelatin over 1/3 cup of the chilled heavy cream and let it soften for 5 minutes.
  7. Whisk in the sugar, crme de menthe, crme de cacao, and egg yolks to the softened gelatin mixture.
  8. Set the bowl over a saucepan of simmering water (double boiler), ensuring the bottom of the bowl does not touch the water.
  9. Cook the mixture, whisking constantly, until it reaches 160F (71C) on a candy thermometer.
  10. Transfer the custard mixture to a bowl set over an ice water bath.
  11. Stir the custard constantly until it is cooled and slightly thickened.
  12. In a separate clean bowl, beat the remaining 1 cup of heavy cream until stiff peaks form.
  13. Gently fold the whipped cream into the cooled custard mixture until thoroughly combined.
  14. Pour the filling into the cooled crust.
  15. Refrigerate the pie for at least 4 hours, or until the filling is completely set.
  16. Sprinkle the top of the pie with grated mint chocolate just before serving.

Note

Storage: Cover the pie tightly with plastic wrap or store in an airtight container in the refrigerator for up to 3 days.

Ingredient Substitution: If you prefer a non-alcoholic version, you can substitute the crme de menthe and crme de cacao with mint extract and white chocolate syrup, though the flavor profile will be different.

Safety Advice: Ensure the egg yolk mixture reaches 160F to safely pasteurize the eggs. Use a reliable candy thermometer for accuracy.

Tip: For the best texture, ensure the heavy cream is very cold before whipping. This helps achieve stiff peaks more easily.

Variation: You can add fresh mint leaves as an additional garnish for a brighter presentation.
