Ingredients

Directions

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Cook the macaroni according to package directions until al dente. Drain well and set aside.
  3. Heat the oil in a large skillet over medium heat. Add the chopped onion and sliced mushrooms.
  4. Sauté the onions and mushrooms until the onions are tender and translucent, about 5-7 minutes.
  5. Stir in the minced garlic, Italian seasoning, rosemary, and ground cumin. Cook for 1 minute until fragrant.
  6. Add the can of stewed tomatoes and the tomato sauce to the skillet. Bring to a simmer and cook uncovered for 5 minutes to thicken slightly.
  7. Remove the skillet from the heat. Stir in the cooked pasta, drained green beans, and half of the shredded Monterey Jack cheese.
  8. Season the mixture generously with salt and black pepper to taste. Stir well to combine all ingredients.
  9. Pour the pasta mixture into an 8x12 inch baking dish, spreading it out evenly.
  10. Sprinkle the remaining shredded Monterey Jack cheese evenly over the top.
  11. Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.
