Description

These vibrant green gnocchi are a delightful twist on the classic Italian dumpling, made with fresh spinach, creamy ricotta, and sharp Parmesan cheese. The dough is light and pillowy, offering a subtle earthy flavor from the spinach that pairs perfectly with the luxurious cream sauce. This dish is ideal for a cozy weeknight dinner or a special vegetarian meal. The sauce, simmered to perfection with butter, cream, and more Parmesan, coats each gnocchi in a rich, savory embrace. Simple yet elegant, this recipe brings restaurant-quality comfort food to your home table with minimal fuss and maximum flavor.

Ingredients

Directions

  1. Cook the spinach in a large skillet with just the water clinging to it from washing until wilted.
  2. Cool the spinach completely, then squeeze out as much liquid as possible with your hands.
  3. Chop the drained spinach finely.
  4. In the same skillet, sauté the chopped spinach and finely chopped onion in 3 tablespoons of butter until soft.
  5. Transfer the spinach and onion mixture to a large mixing bowl.
  6. Stir in the ricotta cheese, 1 cup of freshly grated Parmesan, and the lightly beaten egg.
  7. Mix well until combined.
  8. Season with freshly grated nutmeg, salt, and pepper to taste.
  9. Stir in 1 cup of flour until a slightly sticky dough forms.
  10. Flour your hands and shape the mixture into small balls, no larger than 3/4 inch in diameter.
  11. Reflour your hands whenever the mixture becomes sticky.
  12. Place the shaped gnocchi on a floured baking tray.
  13. In a saucepan, simmer 4 tablespoons of butter and 1 cup of heavy cream over medium heat until slightly thickened, about 20 to 30 minutes.
  14. Bring a large pot of salted water to a boil.
  15. Drop the gnocchi into the boiling water.
  16. Once the water returns to a boil, cook until the gnocchi float to the top.
  17. Remove the gnocchi with a slotted spoon and place them directly into the warmed cream sauce.
  18. Add the remaining freshly grated Parmesan cheese to the sauce.
  19. Gently toss to coat the gnocchi well.
  20. Serve immediately.

Note

Storage: To freeze uncooked gnocchi, place them on floured trays in the freezer until firm, then transfer to plastic bags. They can be cooked directly from frozen, adding a minute or two to the cooking time.

Tip: You can mix the gnocchi ingredients in a food processor before adding the flour for a smoother consistency, but be careful not to overmix.

Variation: For a lighter sauce, substitute half-and-half for some of the heavy cream, though it may not thicken as much.
