Description

This homemade Green Peppercorn Mustard offers a sophisticated twist on traditional condiments, combining the sharp heat of mustard seeds with the fruity, floral kick of green peppercorns. Infused with white wine, tarragon, and dill, it creates a complex flavor profile that is both vibrant and savory. The texture is smooth yet textured enough to provide bursts of heat. Perfect for elevating roasted meats, charcuterie boards, or creamy pasta sauces, this mustard is a versatile addition to any kitchen. It requires minimal active time but benefits from a resting period to develop its full character. Store it in the refrigerator for a long-lasting, flavorful accompaniment to your meals.

Ingredients

Directions

  1. Combine the mustard seeds, dry mustard, hot water, and vinegar in a bowl.
  2. Let the mixture stand for at least 3 hours to soften the seeds.
  3. In a small saucepan, bring the white wine (or vermouth), cinnamon, tarragon, dill seed, salt, and cloves to a boil.
  4. Strain the hot wine mixture into the mustard bowl and stir well.
  5. Add the honey and green peppercorns to the mixture.
  6. Transfer the mixture to a food processor or blender and whirl until pureed.
  7. Place the puree in the top of a double boiler over simmering water.
  8. Cook for about 10 minutes, stirring often, until the mixture is slightly softer than the desired final consistency.
  9. Scrape the mustard into a jar, allow it to cool, and refrigerate.
