Description

This vibrant Green Tomato Chutney is a delightful American classic that balances tartness, sweetness, and heat. Made with firm green tomatoes, crisp green apples, and dried chilies, it offers a complex flavor profile with a jam-like texture. The addition of golden raisins and crystallized ginger adds depth and warmth, while cider vinegar provides the necessary acidity for preservation and brightness. Ideal for serving alongside sharp cheeses, cured meats, or as a condiment for burgers and sandwiches. This recipe is perfect for preserving the bounty of late-season tomatoes before the first frost. It makes an excellent homemade gift and stores beautifully in the pantry for months.

Ingredients

Directions

  1. Cut the green tomatoes into 1/2-inch cubes.
  2. Peel, core, and slice the tart green apples.
  3. If using dried whole chilies, break them up and remove some seeds if you prefer a milder heat.
  4. If using shallots or onions, cover them with boiling water for a few minutes, drain, immerse in cold water, drain again, and peel for easy skin removal.
  5. Combine all ingredients, including the vinegar, sugar, raisins, ginger, garlic, and spices, in a wide 4-quart saucepan.
  6. Bring the mixture to a boil over medium-high heat.
  7. Reduce heat to maintain a simmer and cook for about 30 minutes, stirring occasionally to prevent sticking.
  8. Cook until the chutney thickens to a jam-like consistency.
  9. Ladle the hot chutney into sterilized jars, seal tightly, and let cool completely.

Note

For easy peeling of shallots or onions, first cover them with boiling water, stir, drain, and immerse in cold water to prevent their cooking. Drain again, and peel.

Adjust the amount of chili seeds removed to control the heat level of the chutney.

Store in a cool, dark place once sealed. Refrigerate after opening and consume within 3 months for best flavor.

This chutney pairs excellently with sharp cheddar, brie, or as a topping for grilled chicken and pork.
