Description

These Grilled Beef Fajita Sandwiches are a bold twist on classic American comfort food. Tender flank steak is marinated in a bright mixture of lime juice, garlic, and spices, then grilled to perfection for a smoky char and juicy texture. The star of the sandwich is the homemade Jalapeño Mayonnaise Dressing, which adds a creamy heat that balances the savory beef. Served on toasted poppy-seed buns with crisp lettuce and optional salsa, these sandwiches are perfect for summer barbecues, casual weeknight dinners, or game day gatherings.

Directions

  1. In a medium bowl, whisk together 1/4 cup oil, lime juice, 1/2 teaspoon salt, 1/4 teaspoon pepper, and chopped garlic to make the marinade.
  2. Place the flank steak in the bowl with the marinade, turning to coat all sides thoroughly.
  3. Cover and refrigerate the steak for 2 hours to marinate.
  4. Meanwhile, prepare the Jalapeño Mayonnaise Dressing: In a small saucepan, heat 1 teaspoon oil over medium heat.
  5. Add the chopped jalapeño pepper and sauté until wilted, about 2 minutes.
  6. Stir in the chili powder and cook for 30 seconds, then remove from heat.
  7. Transfer the pepper mixture to a small bowl and stir in the mayonnaise until well mixed. Refrigerate until cold.
  8. Heat an outdoor grill until hot, or preheat an indoor broiler.
  9. Grill the steak 4 inches from the heat for 5 minutes on the first side.
  10. Turn the steak over and grill until medium-rare, 3 to 4 minutes longer.
  11. Transfer the steak to a plate, cover, and refrigerate to cool slightly.
  12. Cut the buns horizontally in half and grill or broil the cut surfaces until lightly toasted.
  13. Wrap the toasted buns in a plastic bag to keep them soft while you prepare the rest.
  14. Just before serving, thinly slice the steak crosswise, holding the knife at an angle against the grain.
  15. Spread the cut surfaces of the buns generously with the chilled Jalapeño Mayonnaise Dressing.
  16. Place a lettuce leaf on the bottom half of each bun.
  17. Top with sliced steak and salsa, if desired, and cover with the top half of the bun.
  18. Serve immediately with pickled cherry peppers on the side, if desired.
