Directions

  1. Place the pork tenderloin steaks in a shallow glass dish.
  2. In a small bowl, combine the crushed rosemary, thyme, minced garlic, and crushed black peppercorns.
  3. Rub the herb mixture evenly over both sides of the pork steaks.
  4. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or ideally overnight.
  5. For the relish, combine diced pears, mango, pineapple, tomatoes, minced garlic, green onions, cilantro, macadamia nuts, and jalapeño in a large mixing bowl.
  6. Toss gently to combine, then season with salt and pepper to taste.
  7. For the syrup, combine granulated sugar and water in a small saucepan over medium heat.
  8. Stir constantly until the sugar is completely dissolved.
  9. Bring the mixture to a boil and simmer until reduced to approximately 1/4 cup, about 5-7 minutes.
  10. Add the balsamic vinegar and continue to boil, stirring occasionally, until reduced to about 2/3 cup.
  11. Remove the saucepan from heat and stir in the rum.
  12. Preheat your grill to medium-high heat.
  13. Remove pork from the refrigerator and let it sit at room temperature for 15 minutes.
  14. Drain any excess marinade from the pork and season lightly with additional salt and pepper if desired.
  15. Grill the pork steaks for 4-6 minutes per side, or until cooked to medium-well doneness (160°F internal temperature).
  16. Remove pork from the grill and let rest for 5 minutes.
  17. To serve, arrange the grilled pork steaks on plates.
  18. Drizzle generously with the warm balsamic rum syrup.
  19. Spoon a generous serving of the chilled pear and mango relish alongside the pork.
