Description

This American-style main features sectioned chicken wings brined for flavor and smoked until tender. The wings are basted with a savory, spicy sauce made with tomato juice, molasses, and a blend of hot peppers, then finished with crumbled bleu cheese. A hearty and satisfying dish perfect for gatherings or a special weeknight dinner.

Ingredients

Directions

  1. Prepare the brine by dissolving sugar and salt in cold water. Add spices to vinegar, bring to a boil, and let cool. Add the liquid smoke to the brine.
  2. Cut up chicken wings and discard tips or use for stock. Rinse pieces in cold water.
  3. Brine wing pieces for 4 hours in the brine solution.
  4. Remove wing pieces from brine and rinse in cold water. Pat dry on paper towels.
  5. Make the sauce and add the dressing and bleu cheese. Let the sauce cool and pour over the wing pieces.
  6. Mix well and allow wing pieces to marinate in a covered glass dish for 5-6 hours in the refrigerator.
  7. Heat the marinade to simmering and hold for 30 minutes.
  8. Prepare the smoker and put on wing pieces when the grill rack is at 230°F (110°C).
  9. Smoke for about 2 hours, basting with sauce every 30-45 minutes.
  10. Serve with bleu cheese dressing.
