Description

This recipe reimagines traditional Indian minced meat kebabs by using fresh salmon, creating a lighter, elegant appetizer perfect for gatherings. The fish is chopped finely and mixed with vibrant cilantro and warm Indian grilling spices, then bound with bread crumbs for texture. Skewered and grilled, these patties develop a smoky char while remaining moist and tender inside. They offer a delicate balance of citrusy freshness from the herbs and robust warmth from the spices. Serve them hot with a side of cucumber raita or spicy apricot chutney for a refreshing contrast. This dish is an excellent choice for cocktail parties or as a sophisticated starter that showcases the natural flavor of high-quality fish.

Ingredients

Directions

  1. Soak bamboo skewers in water for at least 30 minutes to prevent burning.
  2. Chop the skinned salmon fillets finely using a knife or food processor, being careful not to pur&# 195;©e the meat into a paste.
  3. In a large bowl, combine the chopped salmon, 3 tablespoons of finely chopped fresh cilantro, 2 tablespoons of Indian Grilling and Roasting Rub, and 1 tablespoon of dried bread crumbs.
  4. Mix the ingredients thoroughly until just combined, ensuring the spices are evenly distributed.
  5. Moisten your hands with water to prevent sticking, then take about 1/4 cup (75 g) of the salmon mixture.
  6. Form the mixture into a small patty directly onto a skewer, pressing it firmly so it adheres well.
  7. Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
  8. Test one skewer by grilling it briefly; if the patty holds together, proceed to shape the remaining mixture into 7 equal portions on the remaining skewers.
  9. If the test patty falls apart, return the mixture to the bowl, add an additional tablespoon of bread crumbs, mix again, and re-form the patties.
  10. Place the salmon skewers on the grill and cook for about 3 to 4 minutes per side, or until the fish is opaque and cooked through.
  11. Brush lightly with oil halfway through cooking to keep them moist and help them brown.
  12. Remove from the grill and serve immediately with your choice of chutney or raita.

Note

Ensure bamboo skewers are soaked for at least 30 minutes before grilling to prevent them from catching fire.

If the salmon mixture seems too loose to hold its shape on the skewer, add an extra tablespoon of dried bread crumbs to help bind it.

Serve these kebabs hot with cucumber raita or spicy apricot chutney for a refreshing contrast to the warm spices.
