Description

This vibrant skirt steak recipe relies on a bold, fresh marinade of cilantro, lime, jalape&# 195;±o, and toasted cumin to tenderize the meat and infuse it with bright, zesty flavors. The long marination time is key, breaking down fibers for a juicy result that grills up perfectly in minutes. The result is a steak that is tender, smoky, and bursting with aromatic herbs. It pairs beautifully with warm flour tortillas and a cool avocado relish, making it an ideal choice for summer barbecues, quick weeknight dinners, or casual gatherings with friends. Simple ingredients yield restaurant-quality results.

Ingredients

Directions

  1. In a small heavy frying pan, toast the cumin seeds over moderately high heat, shaking the pan until fragrant, about 30 seconds.
  2. Transfer the toasted cumin seeds to a blender.
  3. Add the halved jalapeños, 3 cloves garlic, cracked black pepper, and salt to the blender.
  4. Puree with lime juice until the cumin seeds are finely ground.
  5. Add the coarsely chopped cilantro and olive oil to the blender and puree until smooth.
  6. Trim excess fat from the skirt steak and cut into 6 pieces.
  7. Rub the meat all over with some of the marinade and roll each piece into a cylinder.
  8. Arrange the rolled meat in a shallow glass dish or stainless-steel pan.
  9. Pour the remaining marinade over the meat.
  10. Cover and marinate in the refrigerator for 24 to 48 hours.
  11. About 30 minutes before cooking, remove the meat from the refrigerator and unroll each steak.
  12. Light the grill or heat the broiler.
  13. Grill or broil the steaks for 3 minutes.
  14. Turn the meat and cook to your taste, about 3 to 4 minutes longer for medium-rare.
  15. Transfer to a carving board and let rest in a warm spot for 5 minutes.
  16. Slice the steaks across the grain and on the diagonal into 1/4 inch thick slices.
  17. Serve with Avocado Corn Relish and warm flour tortillas.
