  1. Brush the mushroom caps generously with olive oil, balsamic vinegar, and lots of black and red pepper.
  2. Grill the mushrooms for 2 and a half minutes on each side until tender and charred.
  3. Prepare a puree of garlic and parsley and garnish the grilled mushrooms with it.
  4. Arrange the mushrooms on a bed of salad greens and serve with lemon slices and roasted red bell pepper.

Note

If you have leftover stems and broken mushroom bits, simmer them for ninety minutes in water with a bay leaf and thyme. Use the resulting dark brew to add or enhance a mushroom flavor in sauces or soups.
