Description

This Grilled Reuben Sandwich is a timeless comfort food staple that delivers rich, savory flavors in every bite. The combination of salty, thinly sliced corned beef and tangy, drained sauerkraut creates a perfect balance of textures and tastes. Melted Swiss cheese adds a creamy, mild richness that ties the ingredients together, while the creamy Thousand Island dressing provides a sweet and tangy contrast. Pressed on a hot griddle with buttered rye bread, the sandwich achieves a golden-brown, crispy exterior while staying warm and gooey inside. It is an ideal lunch option for a quick weeknight meal or a satisfying weekend brunch. Simple to assemble and cook, this recipe brings the authentic taste of a classic deli straight to your kitchen table without any fuss.

Ingredients

Directions

  1. Heat a large skillet or griddle over medium heat.
  2. Take 12 slices of rye bread and spread 2/3 cup of Thousand Island dressing on one side of each slice.
  3. Layer each dressed slice with one slice of Swiss cheese, 2 teaspoons of drained sauerkraut, and 2 slices of corned beef.
  4. Top each assembly with a remaining slice of bread, dressing-side down, to form 6 sandwiches.
  5. Spread butter on the top slice of each sandwich.
  6. Place the sandwiches butter-side down onto the hot skillet.
  7. Cook for 3-4 minutes until the bottom bread is golden brown and crispy.
  8. Carefully flip the sandwiches using a spatula.
  9. Spread butter on the newly exposed top side of the bread.
  10. Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
  11. Remove from heat and secure with toothpicks if desired.
  12. Slice each sandwich crosswise into thirds.
  13. Serve immediately while hot and crispy.

Note

Ensure the sauerkraut is well-drained to prevent the sandwich from becoming soggy during cooking.

For extra crispiness, press down gently on the sandwiches with a spatula while they cook on the griddle.

You can make your own Thousand Island dressing by mixing mayonnaise, ketchup, and finely chopped pickles if you prefer a homemade version.

Store any leftover sandwiches in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet to restore crispiness.
