  1. Preheat the oven to 325&# 194;°F (165°C).
  2. Using a sharp knife, puncture the pork roast all over and insert split garlic cloves into some of the holes.
  3. Place the pork roast in a roasting pan and roast in the oven until cooked through, approximately 1 to 1.5 hours.
  4. Remove the pork from the oven and let it cool slightly. Save any juices from the roasting pan.
  5. Trim excess fat from the cooled pork and cut the meat into bite-sized cubes.
  6. In a large pot or Dutch oven, combine the cubed pork, reserved meat juices, chopped onions, minced garlic, oregano, bay leaf, and salt.
  7. Add enough water to cover the meat if the juices are insufficient. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  8. Add the cut tomatoes, green chiles, jalapeños (if using), dried basil, and chicken broth.
  9. Simmer uncovered for another 15 minutes, stirring occasionally.
  10. Pour in the beer. If the stew seems too thick, add a little more beer or water.
  11. Continue simmering for 15 minutes until the flavors meld and the sauce has thickened slightly.
  12. Remove the bay leaf. Taste and adjust salt if needed.
  13. Serve hot in soup bowls, garnished with chopped fresh cilantro and scallions.
  14. Accompany with warm flour tortillas and refried beans.
