Directions
-
Pat the halibut steaks dry with paper towels and season both sides generously with salt and freshly ground white pepper.
-
Heat 2 tablespoons of olive oil in a large, heavy-bottomed skillet over medium-high heat.
-
Sear the halibut steaks for 3-4 minutes per side until golden brown and cooked through. Remove fish from the pan and set aside on a warm plate.
-
In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of olive oil. Add the finely minced shallots and sauté for 2 minutes until softened and translucent.
-
Add the small mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and have released their moisture.
-
Stir in the tomato paste and oregano, cooking for 1 minute to deepen the flavor.
-
Pour in the fish stock and bring the mixture to a gentle simmer, scraping up any browned bits from the bottom of the pan.
-
Add the peeled and seeded tomatoes and the pitted black olives to the sauce. Simmer for 5 minutes until the sauce thickens slightly.
-
Remove the pan from the heat and whisk in the beurre manie (butter and flour mixture) to enrich and thicken the sauce further.
-
Return the halibut steaks to the skillet, spooning the sauce over the fish to reheat gently for 1-2 minutes.
-
Garnish with fresh parsley if desired and serve immediately with crusty bread or rice.

Note
To make the beurre manie, blend equal parts soft butter and flour together until smooth. Whisk it into the hot sauce off the heat to avoid lumps.
If fresh tomatoes are not in season, you can use high-quality canned whole peeled tomatoes, drained and chopped.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop to prevent the fish from drying out.
This dish pairs well with a crisp white wine such as Sauvignon Blanc or a light Greek Assyrtiko.
