Directions
-
In a 10-inch cast-iron or ovenproof skillet, melt 2 tablespoons of butter over medium-high heat.
-
Add the cooked, sliced red potatoes and brown them until crispy. Remove from skillet and set aside.
-
In the same skillet, melt the remaining 1 tablespoon of butter.
-
Add the sliced mushrooms, thinly sliced onion, sliced sweet red pepper, diced ham, and minced garlic.
-
Sauté the mixture over medium-high heat until the vegetables are tender and fragrant, about 5-7 minutes. Remove and set aside.
-
Wipe the skillet clean with a paper towel.
-
Heat 1 tablespoon of olive oil in the skillet over medium-low heat.
-
Return the browned potatoes to the skillet, followed by the ham and vegetable mixture. Stir in the chopped fresh parsley or basil.
-
In a large bowl, beat together 8 eggs with salt and pepper to taste.
-
Pour the egg mixture evenly over the ingredients in the skillet.
-
Cover the skillet and cook over medium-low heat for 10-15 minutes, or until the eggs are nearly set but still slightly jiggly in the center.
-
Preheat the broiler. Sprinkle the shredded cheddar or Swiss cheese evenly over the top of the frittata.
-
Place the skillet under the broiler, about 6 inches from the heat, for 2 minutes or until the cheese is melted and bubbly and the eggs are fully set.
-
Let cool for a few minutes, then cut into wedges and serve warm.
